Abstract
Con el fin de contribuir a mejorar la alimentación del niño costarricense, se
elaboraron mezclas vegetales teóricas de alto valor nutritivo. Esas mezclas consisten
en la combinación de una leguminosa con un cereal o tubérculo, en proporcioneS
tales como para que la proteína alcance un adecuado valor biológico; las
mezclas llevan 10 % de grasa o de azúcar. Para determinar las proporciones de los
alimentos en las mezclas, se seleccionó un NDpCal % de 6 como el nivel requerido
para la alimentación diaria del preescolar. Los alimentos para las mezclas fueron
seleccionados de acuerdo a su alta frecuencia, según los hábitos alimentarios
de la sociedad costarricense, bajo costo, alta densidad calórica y disponibilidad
durante el año.
Los cálculos utilizados para la confección de las mezclas se presentan en los
Apéndices 1 a 4. El alto poder nutritivo del frijol determinó su escogencia como
alimento base para las mezclas. Con el fin de variar la alimentación del niño, se
proponen mezclas a base de un vegetal complementado con pequeñas cantidades
de carne o huevo
In arder to contribute towards a betterment of the alimentation of the Costa Riean child, vegetable mixtures of high nutrient value were designad. The mixtures were combinations of a legume and either a cereal OY tubar, in sueh proportions that the protein attained a level compatible with a high biologícal value. To establish the proportion of each fooo in the mixtures, an NDpCal % value of 6 was selected as adequate tor the proper alimentation of th9 preschool chi\d. The fooas use to make up to elaborate trte mixtures were chosen according to their higo frequency in the diet of the Costa Ricans, iow cost, high calorie density, ana availability throughout most of the year. The proportions of foads in the mixtures are shown in Appendices 1 to 4. Owing to the hígh nutrient value of beans this legume was seleeted as the base for all mixtures. In order to diversity the diet of the child, additional mixtures based ona vegetable toad complemented with smalJ amounts of meat or egg, were proposed.
