Derivado del excesivo consumo de azúcar en la sociedad costarricense y la problemática derivada, en gran parte, por el consumo de bebidas comerciales con contenido alto de sacarosa, y su consecuente efecto sobre la salud pública. En el presente artículo, se evidencia el desarrollo y validación de una metodología analítica libre de interferencias por cromatografía líquida de alta resolución acoplado a un detector de índice de refracción (HPLC-IR), para la cuan-tificación de sacarosa en bebidas comerciales con azúcar añadida. Se lograron determinar las condiciones cromato-gráficas más adecuadas para la cuantificación de sacarosa en el Laboratorio de Química del Recinto de Grecia de la Universidad de Costa Rica, donde sobresale el empleo de una columna cromatográfica Phenyl de 250 x 4.6 mm x 5 μm de partícula, empleando agua ultrapura como fase móvil. Además, la validación de los parámetros de desempeño analítico: linealidad, repetibilidad, precisión intermedia, veracidad, especificidad, los cuales cumplieron a cabalidad con los estándares previstos para cada parámetro analítico evaluado. De esta forma, se establece y valida un nuevo método para cuantificar sacarosa en bebidas comerciales con azúcar añadido, asegurando eficiencia y eficacia en la cuantificación bajo las condiciones validadas.
Derived from the excessive consumption of sugar in Costa Rican society and the problems derived largely from the consumption of commercial beverages with high sucrose content, and its consequent effect on public health. This article shows the development and validation of an analytical methodology free of interference by high-performance liquid chromatography coupled to a refractive index detector (HPLC-IR), for the quantification of sucrose in com-mercial beverages with added sugar. The most suitable chromatographic conditions for the quantification of sucrose were determined in the Chemical Laboratory of the Greece Campus of the University of Costa Rica; where the use of a Phenyl chromatographic column of 250 x 4.6 mm x 5 μm particle stands out, using ultrapure water as the mobile phase. In addition, the validation of the analytical performance parameters: linearity, repeatability, intermediate precision, truthfulness, specificity, which fully complied with the standards provided for each analytical parameter evaluated. In this way, a new method is established and validated to quantify sucrose in commercial beverages with added sugar, ensuring efficiency and effectiveness in quantification under validated conditions.
