La presente invención se relaciona con el campo de la biotecnología y con los procesos que emplean tecnologías
membranarias, y en particular se refiere a un método para la obtención de un extracto enriquecido en taninos del ácido elágico a
partir del fruto de la mora {Rubus spp.) y de otros frutos que contienen estos compuestos, así como al extracto obtenido usando
dicho método. El método se basa fundamentalmente en tecnologías baromembranarias que permiten la separación mecánica y el
fraccionamiento efectivo entre los compuestos polifenólicos, según las interacciones entre sus propiedad físico-químicas, el material
de la membrana y su masa molar, permitiendo enriquecer una fracción de dicho extracto natural con taninos del ácido elágico y
modular su contenido de antocianinas y otros compuestos como azúcares y ácidos.
The invention relates to the field of biotechnology and to processes that employ membrane technologies. In particular, the invention relates to a method for obtaining an extract rich in tannins of ellagic acid from blackberries (Rubus spp.) and from other fruits that contain these compounds, as well as to the extract obtained using said method. The method is essentially based on baromembrane technologies that allow mechanical separation and effective fractionation between the polyphenol compounds, by means of interactions between the physico-chemical properties thereof, the material of the membrane and the molar mass of same, thereby allowing enrichment of a fraction of the natural extract with ellagic acid tannins and modification of the contení thereof in terms of anthocyanins and other compounds such as sugars and acids.
